PANAJI: V. M. Salgaocar Institute of International Hospitality Education (VMSIIHE), Manora-Raia will host a webinar ‘Masterclass on Goan Cuisine’ on Friday, 9th April 2021 starting at 3:00 pm IST. The webinar will feature two of Goa’s renowned chefs, Edia Cotta and Sandip Madkaikar.
Chef Edia Cotta has years of experience in the art of traditional home-style Goan cuisine. With over 35 years of experience in the food industry and having worked at some of the most reputed hotels chains all over Goa, Chef Cotta now owns Cota Cozinha situated at Betalbatim. Chef Cotta will be showcasing her forte and love for rustic and authentic Goan food during her session by delving into a fascinating culinary journey. By illustrating the Portuguese influence on the Goan Cuisine, Chef Cotta will also feature her own personal touch to traditional Goan cuisine.
Chef Sandip Madkaikar, Assistant Professor- Food Production, V. M. Salgaocar Institute of International Hospitality Education will bring out his modernist approach towards cooking while teaching and exhibiting the real essence of authentic and traditional Goan cuisine.
Having worked across various kitchens and other sections at many of the prestigious properties of the Taj group of hotels. Chef Sandip has acquired a multitude of skills in a broad spectrum of food styles and has specialised in the art of fine dining.
